1. The True Nature of Rabokki: Carbohydrate + Carbohydrate
Rabokki is a dish where ramen noodles are added to tteokbokki. This essentially combines two of Korea’s most representative high-carbohydrate snacks into one.
2. The Worst Combination
– Tteokbokki: Its main ingredient, rice cakes, are ‘highly concentrated refined carbohydrates,’ and the sauce is a ‘lump of sugar.’ By itself, it causes an explosive rise in blood sugar.
– Ramen: The ramen noodles are ‘fried refined carbohydrates.’ They also raise blood sugar very quickly and add high calories and saturated fat.
– The Result: Rabokki is a ‘carbohydrate bomb’ that combines two of the fastest and highest blood sugar-spiking foods, maximizing their effect. Nutritionally, you only consume an excess of carbohydrates, sugar, sodium, and saturated fat, with almost no essential nutrients like protein, vitamins, or minerals. It is very far from ‘balanced.’
3. Effect on Blood Sugar
Eating rabokki can cause post-meal blood sugar to spike to very dangerous levels. This is because the total amount of carbohydrates from both the tteok and ramen is enormous, and both ingredients are absorbed very quickly. This places an incredible strain on the pancreas and has the worst possible impact on vascular health.
Summary: Rabokki is not a nutritionally balanced food but a ‘carbohydrate bomb’ that combines two of the fastest blood sugar-spiking carbohydrates. It can be considered one of the top foods that people with diabetes must avoid.
